10-minute Creamy Zucchini Pasta

A quick and creamy pasta dish made with fresh zucchini.

  • 2 medium zucchinis
  • 8 ounces pasta of your choice
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to the package instructions.
  2. While the pasta cooks, spiralize or thinly slice the zucchinis.
  3. In a large skillet, heat olive oil over medium heat and add minced garlic.
  4. Add the zucchinis and sauté for about 2-3 minutes until tender.
  5. Reduce heat and pour in the heavy cream, stirring well.
  6. Add grated Parmesan cheese and mix until melted and creamy.
  7. Drain the pasta and add it to the skillet; toss to combine.
  8. Season with salt and black pepper to taste.
  9. Serve warm, garnished with fresh basil.

  • For a lighter version, replace heavy cream with half-and-half.
