  • 2 fillets salmon
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a saucepan, bring vegetable broth to a boil and add orzo. Cook according to package instructions.
  2. In a skillet, heat olive oil over medium-high heat. Season salmon with salt and pepper.
  3. Place salmon fillets skin-side down in the skillet and sear for about 4 minutes.
  4. Flip the salmon and add garlic, lemon zest, and lemon juice. Cook for another 4 minutes or until cooked through.
  5. Drain the orzo and toss it with the lemon juice, parsley, and a pinch of salt.
  6. Serve salmon over the lemon orzo and garnish with additional parsley if desired.
