- 2 fillets salmon
- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- In a saucepan, bring vegetable broth to a boil and add orzo. Cook according to package instructions.
