- 2 pounds potatoes, preferably waxy variety
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1/2 cup onion, finely chopped
- 1/2 cup chicken broth
- 1/4 cup apple cider vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon sugar
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- Boil the potatoes until tender, then let them cool.
- Cook the turkey bacon in a skillet until crispy, then remove and chop.
- In the same skillet, sauté the onion until translucent.
- Whisk together the chicken broth, vinegar, mustard, and sugar in a bowl.
- Slice the cooled potatoes and add them to a large bowl with the bacon, chicken ham, and onions.
- Pour the dressing over the salad and toss gently to combine.
- Season with salt and pepper to taste and garnish with parsley.
- Serve warm or chilled.
Notes
- This salad can be made a day ahead, just add the parsley before serving.
