  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 pound cheese tortellini
  • 2 cups spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the carrots, celery, and onion; cook until the vegetables are softened.
  3. Stir in the garlic, thyme, and basil, and cook for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the tortellini and cook according to package instructions.
