Autumn Wild Rice Soup

A comforting soup perfect for chilly autumn days, combining wild rice and turkey bacon for a delightful flavor.

  • 1 cup wild rice
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 1/2 teaspoon black pepper
  • 2 cups spinach, chopped
  • 1/4 cup heavy cream (optional)

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. Sauté onion, carrots, and celery in the bacon drippings until softened.
  3. Add garlic and cook for 1 minute.
  4. Stir in wild rice, vegetable broth, thyme, sage, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Add chopped spinach and bacon, cook for an additional 5 minutes.
  7. If desired, stir in heavy cream before serving.

Notes

  • This soup can be made ahead and stored in the refrigerator for 3-4 days.
  • For a vegan version, omit the turkey bacon and cream.
