  • 6 strips bacon, chopped
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup cheddar cheese, shredded
  • 1 cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon mustard

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the grease in the pot.
  2. Add the ground beef to the pot and cook until browned. Drain excess fat.
  3. Stir in the onions and garlic, cooking until softened.
  4. Add the potatoes, beef broth, Worcestershire sauce, and mustard. Bring to a boil.
  5. Reduce heat and simmer until the potatoes are tender.
  6. Stir in milk and shredded cheese until melted and smooth.
  7. Season with salt and pepper to taste. Top with crispy bacon before serving.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • For a spicier kick, add jalapeños or hot sauce.
