  • 1 cup canned pumpkin
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, combine pumpkin, granulated sugar, oil, eggs, and vanilla until smooth.
  4. Gradually mix the dry ingredients into the pumpkin mixture until just combined.
  5. Pour the batter into the prepared loaf pan and sprinkle brown sugar and cinnamon sugar on top.
  6. Bake for 60-70 minutes, or until a toothpick inserted comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack.
