  • 2 pounds beef chuck roast
  • 1 pound lamb shoulder
  • 2 cups beef broth
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 bay leaves
  • Salt to taste
  • 12 corn tortillas
  • 2 cups shredded cheese (optional)
  • 1 lime, cut into wedges

Instructions

  1. In a pot, soak the guajillo and ancho chiles in hot water for 15 minutes.
  2. In a blender, combine the soaked chiles, chopped onion, garlic, cumin, oregano, and beef broth. Blend until smooth.
  3. In a large pot, add the beef chuck and lamb shoulder. Pour the blended mixture over the meat.
  4. Add the bay leaves and salt. Bring to a boil, then reduce heat and simmer for 2-3 hours until the meat is tender.
  5. Remove the meat and shred with forks. Strain the broth and keep warm.
  6. Heat the tortillas in a skillet. Fill each with shredded meat and cheese, if using.
  7. Dip each taco briefly in the broth before serving.
  8. Serve with lime wedges on the side.

Notes

  • For extra flavor, marinate the meat overnight.
  • Feel free to adjust the spice level by adding more or fewer chiles.
