- 2 pounds beef chuck roast
- 1 pound lamb shoulder
- 2 cups beef broth
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 2 bay leaves
- Salt to taste
- 12 corn tortillas
- 2 cups shredded cheese (optional)
- 1 lime, cut into wedges
- In a pot, soak the guajillo and ancho chiles in hot water for 15 minutes.
- In a blender, combine the soaked chiles, chopped onion, garlic, cumin, oregano, and beef broth. Blend until smooth.
- In a large pot, add the beef chuck and lamb shoulder. Pour the blended mixture over the meat.
- Add the bay leaves and salt. Bring to a boil, then reduce heat and simmer for 2-3 hours until the meat is tender.
- Remove the meat and shred with forks. Strain the broth and keep warm.
- Heat the tortillas in a skillet. Fill each with shredded meat and cheese, if using.
- Dip each taco briefly in the broth before serving.
- Serve with lime wedges on the side.
