Broccoli & Cheddar Soup

This Broccoli & Cheddar Soup is a delightful and creamy dish enhanced with turkey bacon for extra flavor.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and crumble.
  2. Add the diced onion and garlic to the pot, and sauté until softened.
  3. Add the broccoli and chicken broth, bring to a boil, then simmer until broccoli is tender.
  4. Blend the soup until smooth, then return to the pot.
  5. Stir in the heavy cream and cheddar cheese until melted. Adjust seasoning with salt and pepper.
  6. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
