1 medium butternut squash
2 tablespoons olive oil
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
4 cups chicken broth
2 cups cooked chicken, shredded
1 teaspoon thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 cup heavy cream
2 tablespoons fresh parsley, chopped
Instructions
Peel and dice the butternut squash.
In a large pot, heat olive oil over medium heat.
Add onion, carrots, and celery; sauté until softened.
Stir in garlic and cook for 1 minute.
Add the butternut squash and chicken broth; bring to a boil.
Reduce heat and simmer until the squash is tender.
Blend the soup until smooth; return to pot.
Stir in chicken, thyme, salt, and pepper.
Add heavy cream and heat through.
