Butternut Squash Ravioli

A delightful twist on a classic dish, this Butternut Squash Ravioli recipe features the savory addition of turkey bacon.

  • 2 cups butternut squash, cubed
  • 1 tablespoon olive oil
  • 8 ounces turkey bacon, chopped
  • 1 shallot, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 package wonton wrappers
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh sage, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spread the butternut squash on a baking sheet, drizzle with olive oil, and roast for 25 minutes until tender.
  3. In a skillet, cook the turkey bacon and shallot over medium heat until bacon is crispy.
  4. In a bowl, mash the roasted squash and mix in bacon, salt, pepper, Parmesan, and sage.
  5. Place a spoonful of filling on each wonton wrapper, fold and seal.
  6. Boil the ravioli in salted water for 3-4 minutes until they float.
  7. Serve with sauce of choice.

  • For a vegetarian option, omit the turkey bacon.
