- 2 cups leeks, sliced
- 1 cup mushrooms, chopped
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1 cup gruyere cheese, shredded
- 8 ounces pasta of choice
- Salt to taste
- Black pepper to taste
- Cook pasta according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat. Add leeks and sauté until caramelized.
- Add mushrooms and cook until soft.
- Stir in heavy cream and bring to a simmer.
- Add gruyere cheese, stirring until melted.
- Combine pasta with the sauce, add salt and pepper to taste.
- Serve hot, garnished with additional cheese if desired.

- For extra flavor, add garlic while sautéing leeks and mushrooms.
