- 2 cups granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 teaspoon vanilla extract
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the flour, sugar, baking soda, baking powder, spices, and salt.
- In another bowl, beat the eggs and then add the oil, grated carrots, pineapple, and vanilla.
- Combine the wet and dry ingredients, and mix until just combined.
- Pour half of the batter into a greased springform pan.
- In a separate bowl, beat the cream cheese with powdered sugar and vanilla until smooth.
- Spoon the cream cheese mixture over the carrot cake batter in the pan.
- Top with the remaining carrot cake batter.
- Bake in the preheated oven for 50-60 minutes or until a toothpick comes out clean.
