  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugar, baking soda, baking powder, spices, and salt.
  3. In another bowl, beat the eggs and then add the oil, grated carrots, pineapple, and vanilla.
  4. Combine the wet and dry ingredients, and mix until just combined.
  5. Pour half of the batter into a greased springform pan.
  6. In a separate bowl, beat the cream cheese with powdered sugar and vanilla until smooth.
  7. Spoon the cream cheese mixture over the carrot cake batter in the pan.
  8. Top with the remaining carrot cake batter.
  9. Bake in the preheated oven for 50-60 minutes or until a toothpick comes out clean.
  10. Let it cool before removing from the pan.
