  • 16 ounces cream cheese
  • 1/2 cup sour cream
  • 1 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine flour, sugars, oil, and eggs. Mix well.
  3. Stir in grated carrots and vanilla extract.
  4. In a separate bowl, mix baking powder, baking soda, cinnamon, and salt, then add to the carrot mixture.
  5. In another bowl, beat cream cheese until smooth. Add sour cream, powdered sugar, and lemon juice. Mix until well combined.
  6. Pour half of the carrot mixture into a greased springform pan.
  7. Spread the cream cheese mixture over the carrot batter.
  8. Top with the remaining carrot mixture.
  9. Bake for about 60 minutes or until a toothpick comes out clean.
  10. Allow to cool before serving.
