- 2 cups granulated sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 16 ounces cream cheese
- 1/2 cup sour cream
- 1 cup powdered sugar
- 1 teaspoon lemon juice
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine flour, sugars, oil, and eggs. Mix well.
- Stir in grated carrots and vanilla extract.
- In a separate bowl, mix baking powder, baking soda, cinnamon, and salt, then add to the carrot mixture.
- In another bowl, beat cream cheese until smooth. Add sour cream, powdered sugar, and lemon juice. Mix until well combined.
- Pour half of the carrot mixture into a greased springform pan.
