Carrot Cake Whoopie Pies

Deliciously sweet and moist carrot cake whoopie pies filled with cream cheese frosting. Perfect for any occasion!

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup chopped walnuts (optional)
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat together the sugars and oil, then add eggs one at a time.
  4. Mix in grated carrots and walnuts (if using).
  5. Gradually add dry ingredients to the wet mixture until combined.
  6. Drop spoonfuls of batter onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until golden brown.
  8. Let cool completely before filling with cream cheese frosting.
  9. To make the filling, beat together cream cheese, butter, powdered sugar, and vanilla until smooth.
  10. Spread or pipe the filling onto the flat side of half of the cookies and top with the other half.

Notes

  • For a fun twist, add raisins along with the carrots.
  • Experiment with different nuts for added texture.
