- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1 cup chopped walnuts (optional)
- 1 teaspoon vanilla extract
- 8 ounces cream cheese
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract (for filling)
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat together the sugars and oil, then add eggs one at a time.
- Mix in grated carrots and walnuts (if using).
- Gradually add dry ingredients to the wet mixture until combined.
- Drop spoonfuls of batter onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until golden brown.
- Let cool completely before filling with cream cheese frosting.
- To make the filling, beat together cream cheese, butter, powdered sugar, and vanilla until smooth.
- Spread or pipe the filling onto the flat side of half of the cookies and top with the other half.
