Instructions

  1. In a pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until translucent.
  2. Add the carrots and potatoes, stir for a few minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer until the vegetables are tender.
  4. Use an immersion blender to blend until smooth. Stir in the heavy cream.
