Cheesy Ranch Potatoes and Smoked Sausage

  • 2 pounds baby potatoes
  • 1 pound smoked sausage
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half.
  3. In a large bowl, combine potatoes, sausage, olive oil, ranch seasoning, salt, and pepper. Toss well to coat.
  4. Spread the mixture on a baking sheet in a single layer.
  5. Bake for 25-30 minutes until the potatoes are tender and golden brown.
  6. Remove from oven and sprinkle shredded cheddar cheese on top. Return to the oven for an additional 5 minutes.
  7. Serve hot and enjoy!
