Chicken and Potatoes with Dijon Cream Sauce

A delicious and easy recipe for Chicken and Potatoes in a creamy Dijon sauce.

  • 2 pounds chicken thighs
  • 1 pound baby potatoes
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium-high heat and brown the chicken thighs on both sides.
  3. Remove the chicken and set aside. In the same pan, add garlic and cook until fragrant.
  4. Add the baby potatoes, followed by the heavy cream and Dijon mustard. Stir to combine.
  5. Place the chicken back into the skillet, season with salt and pepper, and cover.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and potatoes are tender.
  7. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, marinate the chicken in Dijon mustard for a few hours before cooking.
