Chicken Burrito Casserole

A delicious and easy chicken burrito casserole that the whole family will love. Perfect for a quick weeknight dinner!

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • 6 flour tortillas

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine chicken, black beans, corn, salsa, rice, cheese, chili powder, cumin, and salt.
  3. Layer half the tortillas in a greased baking dish.
  4. Spread the chicken mixture over the tortillas.
  5. Top with remaining tortillas and sprinkle with more cheese.
  6. Bake for 25-30 minutes or until cheese is bubbly.

Notes

  • For extra flavor, add jalapeños or diced bell peppers to the mixture.
  • This casserole can be made ahead of time and refrigerated before baking.
