Chicken Cacciatore Pasta

A hearty dish combining chicken, pasta, and a tomato-based sauce for a comforting meal.

  • 1 pound chicken thighs, boneless and skinless
  • 12 ounces pasta of your choice
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken thighs and cook until browned on both sides.
  3. Remove chicken and set aside. In the same skillet, add onion and garlic, sauté until softened.
  4. Add diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Stir to combine.
  5. Return chicken to the skillet, cover, and let simmer for 20-25 minutes.
  6. Meanwhile, cook pasta according to package instructions; drain.
  7. Once chicken is cooked, shred it and return it to the sauce.
  8. Combine shredded chicken and pasta. Serve with Parmesan cheese on top.

Notes

  • For a spicier version, add red pepper flakes.
  • This dish can be made ahead of time and reheats well.
