Chicken Piccata Pasta is a delicious and simple dish that combines the classic flavors of chicken piccata with pasta for a quick weeknight dinner.

  • 8 ounces fettuccine
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 2 tablespoons capers
  • 1/4 cup fresh parsley

Instructions

  1. Cook the fettuccine according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, and cook until golden brown and cooked through, about 5-6 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add lemon juice, chicken broth, and capers, scraping up brown bits from the bottom. Bring to a simmer.
  4. Add cooked fettuccine and toss to coat. Slice chicken and add it back to the skillet. Toss to combine and heat through.
  5. Remove from heat and stir in fresh parsley before serving.
