  • 1 cup carrots, diced
  • 1 cup celery, chopped
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 cup peas

Instructions

  1. In a large pot, melt butter over medium heat. Add onions, carrots, and celery. Sauté until softened.
  2. Add diced chicken and cook until browned.
  3. Stir in flour and cook for an additional minute.
  4. Add chicken broth, potatoes, garlic powder, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes until potatoes are tender.
  6. Stir in heavy cream and peas. Cook for another 5 minutes.
