  • 1 pound chicken breast, diced
  • 4 medium potatoes, peeled and cubed
  • 1 cup turkey bacon, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the diced chicken and cook until no longer pink.
  4. Stir in the potatoes, chicken broth, and thyme. Bring to a boil, then reduce heat and simmer until potatoes are tender.
