This chicken soup recipe combines turkey bacon and fresh vegetables for a comforting meal.

Ingredients

  • 4 cups chicken broth
  • 1 cup turkey bacon, chopped
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste
  • 2 cups cooked chicken, shredded
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add onions and garlic, sauté until translucent.
  3. Pour in the chicken broth and add mixed vegetables, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 15 minutes.
  5. Stir in shredded chicken and cook for an additional 5 minutes.
  6. Serve hot and enjoy!
