Coconut Chicken Rice Bowl

Ingredients

  • 1 cup jasmine rice
  • 2 cups coconut milk
  • 1 pound chicken breast, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup green onions, sliced

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and coconut milk; bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked.
  4. In a skillet, heat vegetable oil over medium heat; add ginger and garlic, sauté until fragrant.
  5. Add diced chicken, soy sauce, salt, and pepper; cook until chicken is browned and cooked through.
  6. Fluff the rice with a fork and serve topped with the chicken mixture and green onions.

Notes

  • For added flavor, marinate chicken in soy sauce and ginger for 30 minutes before cooking.
