Comforting Loaded Baked Potato Soup

A creamy and hearty loaded baked potato soup, perfect for chilly days, combined with turkey bacon and chicken ham for an extra flavor boost.

Ingredients

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. In a large pot, cook turkey bacon until crispy, then remove and crumble.
  2. Add onion and garlic to the pot and sauté until translucent.
  3. Add cubed potatoes, chicken ham, and chicken broth. Bring to a boil and then simmer until potatoes are tender.
  4. Stir in heavy cream, salt, black pepper, and paprika.
  5. Use an immersion blender to blend some of the soup, leaving chunks for texture.
  6. Mix in crumbled bacon, cheddar cheese, and sour cream, stirring until cheese is melted.
  7. Serve hot, garnished with additional cheese and bacon.

Notes

  • For a vegetarian version, you can omit the bacon and chicken ham.
  • Top with chopped green onions for extra flavor.
