  • 1 pound turkey bacon
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups mashed potatoes
  • 1 cup frozen peas
  • 1 cup carrots, diced
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop into pieces.
  2. In the same pot, add onion and garlic, sauté until fragrant.
  3. Add vegetable broth, mashed potatoes, peas, and carrots. Stir to combine.
  4. Bring to a simmer and cook for 15 minutes.
  5. Add chopped turkey bacon, Worcestershire sauce, thyme, salt, and pepper. Stir well and cook for another 5 minutes.
