This cozy autumn wild rice soup is a delightful blend of creamy flavors with savory turkey bacon, perfect for chilly days.

Ingredients

  • 1 cup wild rice
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 cup spinach, chopped
  • Salt to taste

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil, onion, carrots, and celery. Sauté until softened.
  3. Add garlic and cook for another minute.
  4. Stir in the wild rice and broth. Bring to a boil, then reduce heat and simmer for 40 minutes.
  5. Stir in heavy cream, thyme, black pepper, and spinach. Cook for an additional 5 minutes.
  6. Chop the cooked turkey bacon and add back to the soup. Adjust seasoning with salt if needed.
  7. Serve warm.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Feel free to add more vegetables or your choice of protein.
