- 1 cup wild rice
- 4 slices turkey bacon
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 cup spinach, chopped
- Salt to taste
- Cook the turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, add olive oil, onion, carrots, and celery. Sauté until softened.
- Add garlic and cook for another minute.
- Stir in the wild rice and broth. Bring to a boil, then reduce heat and simmer for 40 minutes.
- Stir in heavy cream, thyme, black pepper, and spinach. Cook for an additional 5 minutes.
- Chop the cooked turkey bacon and add back to the soup. Adjust seasoning with salt if needed.
- Serve warm.
