  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Mix in the softened butter and sugar.
  4. Add in the eggs, vanilla, and mix well.
  5. Stir in the baking soda and salt.
  6. Gradually add the flour, mixing until just combined.
  7. In a separate bowl, beat the cream cheese and powdered sugar together until smooth.
  8. Pour half of the banana batter into the prepared loaf pan.
  9. Add the cream cheese mixture on top, then pour the remaining banana batter over.
  10. Bake for 60-70 minutes, or until a toothpick inserted comes out clean.
  11. Allow to cool before slicing and serving.
