  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups corn kernels (fresh or frozen)
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add olive oil, onion, and garlic to the pot and sauté until the onion is translucent.
  3. Add the corn kernels and vegetable broth, bringing the mixture to a boil.
  4. Reduce the heat and stir in the heavy cream, thyme, salt, and pepper.
  5. Simmer for 10 minutes, then blend half of the chowder for a creamy texture and return to the pot.
  6. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
