- 4 leeks, cleaned and sliced
- 2 large potatoes, peeled and diced
- 4 strips turkey bacon, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
- Remove the bacon and set aside, leaving the drippings in the pot.
- Add the onions and leeks, cooking until softened.
- Stir in the garlic and cook for an additional minute.
- Add the diced potatoes and chicken broth. Bring to a boil, then simmer until the potatoes are tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper. Heat through.

Notes
- For a vegetarian version, omit the turkey bacon.
