Creamy Parmesan Italian Sausage Soup

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups baby spinach

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the Italian sausage and cook until browned.
  3. Add onion and garlic; sauté until the onion is translucent.
  4. Pour in chicken broth and bring to a simmer.
  5. Stir in heavy cream and Parmesan cheese.
  6. Add Italian seasoning, salt, and pepper; cook for another 5 minutes.
  7. Fold in baby spinach just before serving.
