Creamy Potato Soup

A delicious and comforting creamy potato soup made with turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup chopped turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the onions and garlic; sauté until translucent.
  3. Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Blend the soup until smooth using an immersion blender.
  5. Stir in the heavy cream, cooked turkey bacon, salt, and pepper. Simmer for an additional 5 minutes.
  6. Garnish with parsley before serving.

Notes

  • For extra flavor, add a pinch of cayenne pepper.
