  • 8 ounces spinach pasta
  • 1 pound shrimp, peeled and deveined
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the spinach pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
  4. Stir in sun-dried tomatoes and fresh spinach; cook until spinach is wilted.
  5. Pour in the heavy cream and stir to combine. Let it simmer for a few minutes.
  6. Add the cooked pasta and Parmesan cheese; mix well and season with salt and pepper to taste.
  7. Serve hot, garnished with additional Parmesan if desired.

Notes

  • For extra flavor, add crushed red pepper flakes.
  • You can substitute chicken for shrimp if preferred.
