- 8 ounces spinach pasta
- 1 pound shrimp, peeled and deveined
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 teaspoon garlic, minced
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- Salt and pepper to taste
- Cook the spinach pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
- Stir in sun-dried tomatoes and fresh spinach; cook until spinach is wilted.
