  • 4 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 2 cups spinach, fresh
  • 1 tablespoon olive oil

Instructions

  1. In a Crock Pot, place the chicken breasts and add the chicken broth, onion, and garlic.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  3. Remove the chicken from the soup and shred it into bite-sized pieces.
  4. Return the shredded chicken to the Crock Pot.
  5. Stir in heavy cream, Parmesan cheese, Italian seasoning, black pepper, and salt.
  6. Add the spinach and cook for an additional 30 minutes on low.
