Crockpot Chicken and Rice Soup

This Crockpot Chicken and Rice Soup is the perfect comforting meal, easy to make and full of flavor.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup onions
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add rice, chicken broth, carrots, celery, onions, garlic, thyme, and parsley.
  3. Season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, shred the chicken and stir back into the soup.

Notes

  • For a creamy version, add a cup of heavy cream before serving.
  • Feel free to add your favorite vegetables.
