Crockpot Chicken and Rice Soup

This Crockpot Chicken and Rice Soup is a comforting, hearty meal perfect for chilly days. Made with tender chicken, flavorful broth, and fluffy rice, it will warm your soul with every bowl.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup white rice
  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add rice, chicken broth, carrots, celery, onion, garlic, thyme, salt, and pepper on top of the chicken.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. In the last 30 minutes of cooking, stir in the frozen peas.
  5. Once cooked, shred the chicken in the pot, stir everything together, and serve warm.

Notes

  • For a creamier soup, add a splash of heavy cream before serving.
