Crockpot Chicken Gnocchi Soup

Ingredients

  • 1 pound chicken breast
  • 1 pound gnocchi
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 2 cups spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup heavy cream

Instructions

  1. Place the chicken breast in the crockpot.
  2. Add chicken broth, carrots, celery, onion, garlic powder, Italian seasoning, salt, and pepper.
  3. Cook on low for 6-8 hours or high for 4 hours.
  4. About 30 minutes before serving, shred the chicken and return it to the pot.
  5. Add gnocchi and spinach; stir and cook until heated through.
  6. Stir in heavy cream before serving.

Notes

  • For extra creaminess, you can add more heavy cream.
  • Feel free to add any other vegetables you like.
