Crockpot Chicken Parmesan Soup

A warm and comforting soup perfect for any day of the week.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 ounces) diced tomatoes
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked pasta
  • 1 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add chicken broth, diced tomatoes, onion, garlic, basil, oregano, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Shred the chicken and return it to the soup.
  5. Stir in cooked pasta and Parmesan cheese just before serving.
  6. Garnish with fresh parsley.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • For a creamier soup, add a splash of heavy cream before serving.
