Crockpot Chicken Parmesan Soup

A warm and hearty soup that combines the flavors of chicken parmesan in a convenient crockpot recipe.

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups diced tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 tablespoon minced garlic
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 8 ounces pasta (e.g. penne or rigatoni)
  • Fresh basil for garnish

Instructions

  1. In a crockpot, combine chicken breasts, chicken broth, diced tomatoes, heavy cream, Italian seasoning, garlic, salt, and pepper.
  2. Cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through.
  3. Remove chicken, shred it, and return it to the crockpot.
  4. Add pasta and cook on high for an additional 30 minutes until pasta is tender.
  5. Stir in grated Parmesan cheese before serving.
  6. Garnish with fresh basil.

  • For a lighter version, use low-fat cream or milk instead of heavy cream.
