Crockpot Chicken Parmesan Soup

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups cooked pasta of your choice

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the chicken broth, diced tomatoes, garlic powder, dried basil, onion powder, salt, and pepper.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken using two forks.
  5. Stir in the heavy cream and Parmesan cheese until melted and combined.
  6. Add the cooked pasta just before serving.
  7. Garnish with additional Parmesan and fresh basil if desired.
