Crockpot Chicken Parmesan Soup

  • 1 pound chicken breasts
  • 4 cups chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 cups cooked pasta

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the chicken broth, crushed tomatoes, onions, garlic, Italian seasoning, and black pepper.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Once the chicken is cooked, shred it using two forks.
  5. Stir in the heavy cream and parmesan cheese until melted and combined.
  6. Add the cooked pasta and mix well before serving.

Notes

  • For extra flavor, add fresh basil before serving.
