Crockpot Chicken Wild Rice Soup

A warm and comforting soup made with tender chicken, wild rice, and a medley of vegetables. Perfect for chilly days!

  • 1 pound chicken breasts
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the wild rice, chicken broth, carrots, celery, onion, garlic, thyme, salt, and pepper.
  3. Stir everything to combine and cover with the lid.
  4. Cook on low for 6-8 hours or on high for 4-5 hours.
  5. Once cooked, remove the chicken and shred it, then return it to the pot.
  6. Stir in the heavy cream and fresh parsley before serving.

Notes

  • This soup can be topped with additional herbs for extra flavor.
  • For a thicker soup, use less broth or add a roux.
