Crockpot Lemon Chicken Soup

Ingredients

  • 1 pound chicken breasts
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 lemon, juiced
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup spinach

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add chicken broth, carrots, celery, onion, garlic, lemon juice, thyme, oregano, salt, and pepper.
  3. Set the crockpot to low and cook for 6-8 hours or until chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the soup.
  5. Add spinach just before serving and stir until wilted.

Notes

  • For added richness, you can add cream or half and half at the end.
  • This soup freezes well, so save leftovers for a quick meal later!
