Crockpot White Chicken Chili

Quick and delicious crockpot white chicken chili that’s perfect for any occasion!

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1/2 cup cream or sour cream
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the chopped onion, garlic, white beans, corn, cumin, chili powder, and chicken broth.
  3. Cover and cook on low for 6-8 hours or on high for 4 hours.
  4. Shred the chicken with two forks and stir in the cream or sour cream.
  5. Season with salt and pepper to taste.
  6. Serve hot with toppings of your choice.
