- 1 pound boneless, skinless chicken breasts
- 1 can white beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1/2 cup cream or sour cream
- Salt and pepper to taste
- Place the chicken breasts at the bottom of the crockpot.
- Add the chopped onion, garlic, white beans, corn, cumin, chili powder, and chicken broth.
- Cover and cook on low for 6-8 hours or on high for 4 hours.
- Shred the chicken with two forks and stir in the cream or sour cream.
- Season with salt and pepper to taste.
