1 cup graham cracker crumbs
1/4 cup unsalted butter, melted
2 cups cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/4 cup strong brewed coffee, cooled
1 tablespoon coffee liqueur (optional)
1 cup heavy whipping cream
2 tablespoons cocoa powder
Instructions
Preheat the oven to 325°F (163°C).
In a medium bowl, mix the graham cracker crumbs and melted butter together until well combined. Press the mixture into the bottom of a 9-inch springform pan.
In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add vanilla extract and mix.
Add the eggs one at a time, mixing well after each addition.
Stir in the cooled coffee and coffee liqueur until fully incorporated.
Pour the cheesecake batter over the crust and smooth the top.
Bake for about 45-50 minutes or until the center is set.
Let the cheesecake cool completely, then refrigerate for at least 4 hours or overnight.
Before serving, whip the heavy cream until soft peaks form. Spread it over the top of the cheesecake and dust with cocoa powder.
Notes
For a stronger coffee flavor, use espresso instead of brewed coffee.
Can be stored in the refrigerator for up to 5 days.
