- 1 pound Italian sausage
- 1 cup chopped onion
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced tomatoes
- 2 cups fresh spinach
- 1 package refrigerated tortellini
- 1 teaspoon Italian seasoning
- salt and pepper to taste
- In a Dutch oven, heat the olive oil over medium heat. Add the sausage and cook until browned.
- Stir in the onion and garlic; cook until the onion is translucent.
- Add the chicken broth, diced tomatoes, and Italian seasoning. Bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Stir in the tortellini and cook until tender, about 5 minutes.
- Remove from heat and stir in the spinach until wilted.
- Season with salt and pepper to taste. Serve hot.
