Dutch Oven Tortellini Soup with Sausage

A warm and comforting soup filled with tortellini, sausage, and vegetables, perfect for chilly days.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced tomatoes
  • 2 cups fresh spinach
  • 1 package refrigerated tortellini
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. In a Dutch oven, heat the olive oil over medium heat. Add the sausage and cook until browned.
  2. Stir in the onion and garlic; cook until the onion is translucent.
  3. Add the chicken broth, diced tomatoes, and Italian seasoning. Bring to a boil.
  4. Reduce heat and simmer for 10 minutes.
  5. Stir in the tortellini and cook until tender, about 5 minutes.
  6. Remove from heat and stir in the spinach until wilted.
  7. Season with salt and pepper to taste. Serve hot.

Notes

  • This soup can be topped with grated Parmesan cheese for added flavor.
