Easy Baked Feta Spaghetti Squash

Ingredients

  • 1 large spaghetti squash
  • 200 grams feta cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash cut side up on a baking sheet and drizzle with olive oil.
  4. Sprinkle with salt, pepper, and oregano. Place the feta cheese in the center of the squash.
  5. Add cherry tomatoes around the feta and squash.
  6. Bake for 45-50 minutes, until the squash is tender.
  7. Remove from oven and let cool slightly, then use a fork to scrape the flesh into strands.
  8. Mix in garlic and fresh basil before serving.

Notes

  • For a bit of heat, add red pepper flakes.
  • This recipe can be made ahead of time and reheated.
