Easy Creamy Chicken Noodle Soup

Ingredients

  • 1 pound chicken breast
  • 4 slices turkey bacon
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. Add onions, carrots, and celery to the pot, sautéing until softened.
  3. Stir in garlic and cook for another minute.
  4. Add chicken broth and bring to a boil.
  5. Once boiling, add chicken breast and simmer until cooked through.
  6. Shred the chicken and return it to the pot.
  7. Add egg noodles and cook until tender.
  8. Stir in heavy cream, thyme, salt, and pepper.
  9. Top with crumbled bacon before serving.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
