- 1 pound chicken breast
- 4 slices turkey bacon
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups egg noodles
- 1 cup heavy cream
- 2 teaspoons dried thyme
- Salt and pepper to taste
- In a large pot, cook turkey bacon until crispy. Remove and crumble.
- Add onions, carrots, and celery to the pot, sautéing until softened.
- Stir in garlic and cook for another minute.
- Add chicken broth and bring to a boil.
- Once boiling, add chicken breast and simmer until cooked through.
- Shred the chicken and return it to the pot.
