2 cups sushi rice
4 cups water
1 pound salmon fillet
1/4 cup soy sauce
2 tablespoons rice vinegar
1/4 cup mayonnaise
1 tablespoon sriracha
2 green onions thinly sliced
1 sheet nori, cut into strips
Instructions
Preheat your oven to 375°F (190°C).
Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer’s instructions.
While the rice is cooking, prepare the salmon. Season it with soy sauce and bake for 15-20 minutes or until cooked through.
Once the salmon is done, flake it into a bowl and mix in rice vinegar.
Combine the cooked rice and flaked salmon in a baking dish.
In a separate small bowl, mix together mayonnaise and sriracha to make the spicy mayo.
Spread the spicy mayo over the rice and salmon mixture.
Bake in the oven for an additional 10-15 minutes until heated through.
Garnish with green onions and nori strips before serving.
Notes
For extra crunch, you can broil the sushi bake for the last few minutes.
Adjust the level of spiciness by adding more or less sriracha to the mayo.
